I love casseroles. They are easy and yummy and the options are endless. Last night I made a Doritos Taco Casserole. It was a hit! barely any leftovers. So here’s what went into that wonderful concoction:
2lbs ground beef
2 cans re-fried beans (I like re-fried black beans)
1 small can of red enchilada sauce
2 packets of taco seasoning
Shredded Cheddar cheese
Crushed Doritos-you can choose your flavor, we like Cool Ranch but any flavor will be fine
9×13 baking dish
Tomatoes, lettuce, sour cream, onions, avocado and whatever other choice taco toppings you prefer for garnishing
Brown ground beef, drain off excess fat and add taco seasoning according to directions. Simmer until thoroughly mixed. Set aside.
Empty contents of re-fried beans into baking dish and spread out to create a bottom layer. Place ground beef mixture on top of beans. Add Enchilada sauce. Then add a layer of cheese. The crushed Doritos will be the final layer. Sprinkle any remaining cheese on top of that.
Bake at 350 for 25 minutes.
Scoop out of dish and serve and let the fam top it however they’d like.
